Ingredients

- 1 English cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- Salt and pepper, to taste
Instructions
- Wash and dry all vegetables thoroughly.
- Chop vegetables into bite-sized pieces.
- In a large bowl, toss together cucumbers, tomatoes, bell peppers, red onions, and herbs.
- Crumble feta cheese over the mixed vegetables.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl. Pour dressing over salad and toss gently.
- Let sit for 10 minutes before serving.
