Ingredients

  • 1 head fresh romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ cup Kalamata olives
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh parsley or basil, chopped
  • ¼ cup extra virgin olive oil
  • 2 tbsp balsamic vinegar or lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and dry your romaine lettuce thoroughly. Chop it into bite-sized pieces and add it to a large salad bowl.
  2. Slice your cherry tomatoes in half and toss them into the bowl, followed by your diced cucumber.
  3. Next, add the Kalamata olives and crumbled feta cheese. If you’re adding fresh herbs, now’s the time to chop and sprinkle them in, too.
  4. In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to create a simple dressing. Adjust the acid by adding more vinegar or lemon juice to taste.
  5. Drizzle the dressing over your salad, then gently toss everything together until the salad is evenly coated.
  6. Taste and adjust seasoning if necessary.
  7. Serve immediately or allow it to chill for a few minutes to let those flavors meld together.
