Ingredients

- 1 head fresh romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ cup Kalamata olives
- 1 cup feta cheese, crumbled
- ¼ cup fresh parsley or basil, chopped
- ¼ cup extra virgin olive oil
- 2 tbsp balsamic vinegar or lemon juice
- Salt and pepper to taste
Instructions
- Wash and dry your romaine lettuce thoroughly. Chop it into bite-sized pieces and add it to a large salad bowl.
- Slice your cherry tomatoes in half and toss them into the bowl, followed by your diced cucumber.
- Next, add the Kalamata olives and crumbled feta cheese. If you’re adding fresh herbs, now’s the time to chop and sprinkle them in, too.
- In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to create a simple dressing. Adjust the acid by adding more vinegar or lemon juice to taste.
- Drizzle the dressing over your salad, then gently toss everything together until the salad is evenly coated.
- Taste and adjust seasoning if necessary.
- Serve immediately or allow it to chill for a few minutes to let those flavors meld together.
