- 1 box cornbread mix
- 1 can whole kernel or creamed corn
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup diced bell peppers
- 1 cup diced yellow onion
- 2 cloves garlic, minced
- 2 large eggs
- 1 cup milk (or buttermilk)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat, then sauté the diced onion and bell peppers until soft.
- In a large mixing bowl, combine the cornbread mix, canned corn, sautéed vegetables, shredded cheese, minced garlic, eggs, and milk. Stir until well mixed.
- Grease a 9×13-inch baking dish and pour the mixture into it, spreading it evenly.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
- Let the casserole cool for a few minutes before serving warm.
Notes
Letting the casserole sit briefly after baking enhances the flavor. You can also substitute for gluten-free cornbread mix or use dairy-free cheese if needed.
