  • 1 can whole kernel or creamed corn
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup diced bell peppers
  • 1 cup diced yellow onion
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup milk (or buttermilk)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat, then sauté the diced onion and bell peppers until soft.
  3. In a large mixing bowl, combine the cornbread mix, canned corn, sautéed vegetables, shredded cheese, minced garlic, eggs, and milk. Stir until well mixed.
  4. Grease a 9×13-inch baking dish and pour the mixture into it, spreading it evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
  6. Let the casserole cool for a few minutes before serving warm.
