- 1 package cornbread mix
- 1 can canned corn
- 1 can cream-style corn
- 2 large eggs
- 1 cup sharp cheddar cheese, shredded
- 1 cup milk or sour cream
- 1/2 cup butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, combine cornbread mix, canned corn, cream-style corn, eggs, milk or sour cream, and melted butter. Stir until just mixed.
- Fold in the cheese, reserving a handful for topping.
- Pour the mixture into the greased baking dish, smoothing the top with a spatula.
- Bake for 30-35 minutes or until golden brown and a toothpick inserted comes out clean. Sprinkle reserved cheese on top during the last 5 minutes of baking.
- Allow to cool for a few minutes before serving.
Notes
For variations, try adding sautéed vegetables or spices to enhance flavor. Ensure not to overmix for a tender texture.
