Ingredients

  • 4 firm apples (Honeycrisp or Granny Smith)
  • 8 oz cream cheese
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 2 tbsp melted butter
  • 1 cup graham cracker crumbs
  • Water (for baking)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and core the apples, leaving the bottoms intact.
  3. In a mixing bowl, combine cream cheese, granulated sugar, brown sugar, vanilla extract, cinnamon, and lemon juice until smooth.
  4. Spoon the filling into each apple until overflowing.
  5. In a separate bowl, mix graham cracker crumbs, melted butter, and a pinch of cinnamon; sprinkle over each apple.
  6. Place the apples in a baking dish and pour about an inch of water into the bottom.
  7. Cover with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 15–20 minutes until apples are tender and golden.
  9. Let cool slightly before serving.
