- 8 slices of bacon, cooked and crumbled
- 1 lb ground beef
- 1 cup cheddar cheese, shredded
- 1 cup fresh or frozen corn
- 1 egg, lightly beaten
- 1 cup breadcrumbs (panko preferred)
- Salt and pepper to taste
- Fresh parsley or thyme, optional
Instructions
- In a skillet over medium heat, cook the bacon until crispy. Drain it on paper towels and crumble it into small pieces.
- In a large bowl, combine ground beef with crumbled bacon, corn, shredded cheese, and a lightly beaten egg. Season with salt, pepper, and herbs.
- Gently mix and form corn-sized balls.
- Roll each ball in breadcrumbs. For extra crispiness, double-dip in egg and then breadcrumbs.
- Heat oil in a pot or deep fryer to 350°F (175°C). Fry the balls in batches until golden brown (about 4-5 minutes). Drain on paper towels.
- Allow to cool slightly before serving. Enjoy with dipping sauces like spicy mayo or ranch dressing.
