Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup dark chocolate, chopped (70% cocoa)
  • 1/2 cup heavy cream
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini cake pan.
  2. Cream together the softened butter and sugar until fluffy and light, about 3-4 minutes.
  3. Add in the eggs, one at a time.
  4. Sift in the flour and gently fold it into the batter.
  5. Pour the batter into the mini cake pan, filling each cavity about two-thirds full.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Prepare ganache by heating heavy cream and pouring over chopped chocolate.
  8. Cool the cakes completely before removing them from the pan.
  9. Spoon ganache over each mini cake and allow it to set before serving.

Notes

These cakes can be served with whipped cream, mint, or additional strawberries for decoration.
