- 8 oz mascarpone cheese
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 4 oz semi-sweet chocolate
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
Instructions
- Prepare the crust: In a medium bowl, mix graham cracker crumbs with melted butter and sugar until combined. Press the mixture into the bottom of heart-shaped molds, about ½ inch thick. Bake for 10 minutes and allow to cool.
- Make the filling: In a large mixing bowl, beat the softened cream cheese and mascarpone until smooth. Gradually add sugar and mix well. Add eggs one at a time, blending after each addition, followed by the vanilla extract.
- Melt the chocolate: Gently melt the semi-sweet chocolate using a double boiler or microwave until smooth. Let it cool slightly.
- Combine the batter: Divide the cheesecake batter into two bowls. Add the melted chocolate to one bowl and mix until well combined.
- Swirl the chocolate: Spoon the plain cheesecake batter into the molds, followed by spoonfuls of the chocolate batter. Use a knife to gently swirl.
- Bake: Place molds in a baking dish filled with hot water. Bake for 45-55 minutes or until the edges are set and the center jiggles slightly.
- Cool and chill: Turn off the oven and leave the cheesecakes inside for an hour. Cool at room temperature, then refrigerate for at least four hours.
- Decorate: Serve topped with fresh berries or a drizzle of chocolate ganache.
Notes
Use a water bath to prevent cracking and ensure even baking. For added flavor, consider using dark chocolate or a splash of almond extract.
