Instructions

  1. Prepare the crust: In a medium bowl, mix graham cracker crumbs with melted butter and sugar until combined. Press the mixture into the bottom of heart-shaped molds, about ½ inch thick. Bake for 10 minutes and allow to cool.
  2. Make the filling: In a large mixing bowl, beat the softened cream cheese and mascarpone until smooth. Gradually add sugar and mix well. Add eggs one at a time, blending after each addition, followed by the vanilla extract.
  3. Melt the chocolate: Gently melt the semi-sweet chocolate using a double boiler or microwave until smooth. Let it cool slightly.
  4. Combine the batter: Divide the cheesecake batter into two bowls. Add the melted chocolate to one bowl and mix until well combined.
  5. Swirl the chocolate: Spoon the plain cheesecake batter into the molds, followed by spoonfuls of the chocolate batter. Use a knife to gently swirl.
  6. Bake: Place molds in a baking dish filled with hot water. Bake for 45-55 minutes or until the edges are set and the center jiggles slightly.
  7. Cool and chill: Turn off the oven and leave the cheesecakes inside for an hour. Cool at room temperature, then refrigerate for at least four hours.
  8. Decorate: Serve topped with fresh berries or a drizzle of chocolate ganache.
