Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients just until combined, being careful not to overmix.
- Fold in the finely chopped pistachios.
- Scoop dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes, until golden around the edges but still soft in the center.
- Allow to cool for 5 minutes on the baking sheet before transferring to wire racks to cool completely.
Notes
Pistachios can be substituted with pecans or walnuts for a different flavor. For a lighter texture, sift the flour before measuring.
