Description

A rich and fluffy chocolate mousse made with high-quality dark chocolate, eggs, and heavy cream, perfect for any celebration.


Ingredients

  • 8 oz high-quality dark chocolate (at least 60% cocoa)
  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate using a double boiler until glossy, then let cool slightly.
  2. Separate the eggs, placing yolks in one bowl and whites in another.
  3. Add sugar to egg yolks and whisk until thick and pale; combine with melted chocolate.
  4. Whip the heavy cream in a separate bowl until soft peaks form.
  5. In another bowl, whip egg whites until soft peaks form, then gradually add sugar until stiff peaks form.
  6. Fold whipped cream into the chocolate mixture, then gently fold in the egg whites until no streaks remain.
  7. Spoon mousse into serving dishes and refrigerate for 2-4 hours to set.
  8. Serve with optional whipped cream, chocolate shavings, or fresh berries.

Notes

Use room temperature eggs for better whipping results. Be careful not to overheat the chocolate or over-whip the cream and egg whites.
