A rich and fluffy chocolate mousse made with high-quality dark chocolate, eggs, and heavy cream, perfect for any celebration.
Ingredients

- 8 oz high-quality dark chocolate (at least 60% cocoa)
- 4 large eggs, separated
- 1/2 cup granulated sugar
- 2 cups heavy whipping cream
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Melt the chocolate using a double boiler until glossy, then let cool slightly.
- Separate the eggs, placing yolks in one bowl and whites in another.
- Add sugar to egg yolks and whisk until thick and pale; combine with melted chocolate.
- Whip the heavy cream in a separate bowl until soft peaks form.
- In another bowl, whip egg whites until soft peaks form, then gradually add sugar until stiff peaks form.
- Fold whipped cream into the chocolate mixture, then gently fold in the egg whites until no streaks remain.
- Spoon mousse into serving dishes and refrigerate for 2-4 hours to set.
- Serve with optional whipped cream, chocolate shavings, or fresh berries.
Notes
Use room temperature eggs for better whipping results. Be careful not to overheat the chocolate or over-whip the cream and egg whites.
