  • 1 cup whole roasted peanuts
  • 1/2 cup creamy peanut butter
  • 1 cup dark chocolate, high-quality

Instructions

  1. Prepare the dates by pitting and soaking them in warm water for 10 minutes.
  2. Blend the soaked dates in a food processor until they form a sticky paste.
  3. Add the peanut butter and sea salt; blend until well mixed.
  4. Fold in roasted peanuts by hand.
  5. Line an 8×8 inch baking dish with parchment paper and press the date mixture evenly into the dish.
  6. Chill the mixture in the fridge for 30 minutes.
  7. Melt the dark chocolate with coconut oil in a double boiler or microwave.
  8. Remove the set mixture from the fridge, cut into bars, and dip each into the melted chocolate.
  9. Set the coated bars on a parchment-lined plate and chill until the chocolate hardens for about an hour.
