Instructions
- Prepare the dates by pitting and soaking them in warm water for 10 minutes.
- Blend the soaked dates in a food processor until they form a sticky paste.
- Add the peanut butter and sea salt; blend until well mixed.
- Fold in roasted peanuts by hand.
- Line an 8×8 inch baking dish with parchment paper and press the date mixture evenly into the dish.
- Chill the mixture in the fridge for 30 minutes.
- Melt the dark chocolate with coconut oil in a double boiler or microwave.
- Remove the set mixture from the fridge, cut into bars, and dip each into the melted chocolate.
- Set the coated bars on a parchment-lined plate and chill until the chocolate hardens for about an hour.
