A delightful and nostalgic Date and Walnut Cake that combines the sweetness of dates with the rich crunch of walnuts.

- 1 cup Medjool dates, pitted and mashed
- 1 cup chopped walnuts
- 2 cups all-purpose flour
- 1 cup brown sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup milk
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan or round cake pan with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- In another bowl, mix mashed dates with melted butter, brown sugar, and eggs.
- Gradually fold the dry ingredients into the wet mixture, alternating with milk until just combined.
- Fold in the chopped walnuts evenly.
- Pour batter into the prepared pan and bake for 45-55 minutes until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a vegan version, substitute eggs with applesauce or flaxseed meal and use coconut oil instead of butter. You can also use whole wheat flour for a nuttier flavor.
