Description

A delightful and nostalgic Date and Walnut Cake that combines the sweetness of dates with the rich crunch of walnuts.


Ingredients

  • 1 cup Medjool dates, pitted and mashed
  • 1 cup chopped walnuts
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup milk
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or round cake pan with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, mix mashed dates with melted butter, brown sugar, and eggs.
  4. Gradually fold the dry ingredients into the wet mixture, alternating with milk until just combined.
  5. Fold in the chopped walnuts evenly.
  6. Pour batter into the prepared pan and bake for 45-55 minutes until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a vegan version, substitute eggs with applesauce or flaxseed meal and use coconut oil instead of butter. You can also use whole wheat flour for a nuttier flavor.
