- 1 cup heavy cream
- 3 large eggs
- 1/2 cup powdered sugar
- 1 tsp pure peppermint extract

- 1/2 cup unsalted butter (cold)
Instructions
- Prepare the Tart Shell: Preheat your oven to 350°F (175°C). In a bowl, whisk together flour, sugar, and a pinch of salt. Cut in cold butter until the mixture resembles coarse crumbs. Add the egg and mix until a dough forms. Press into a tart pan and bake for 15-20 minutes or until golden. Cool completely.
- Make the Mousse: Melt the dark chocolate in a double boiler or microwave in short bursts, stirring occasionally until smooth. Let it cool slightly.
- Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar while continuing to whip until stiff peaks form.
- Combine Ingredients: In another bowl, beat the eggs and mix in the melted chocolate and peppermint extract. Gently fold in the whipped cream until combined.
- Assemble the Tart: Pour the chocolate mousse into the cooled tart shell, smoothing the top. Refrigerate for at least 2 hours to allow the mousse to set.
- Serve and Enjoy: Garnish with crushed peppermint candies or a sprinkle of cocoa powder, slice, and serve.
Notes
For a lighter version, substitute heavy cream with coconut cream. Make sure to let the tart chill long enough for the mousse to set properly.
