- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1 egg yolk
- 8 ounces dark chocolate (70% cocoa or higher)
- 2 large eggs
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon peppermint extract
- 1 cup heavy cream
- Whipped cream and crushed peppermint candies for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Combine flour, butter, sugar, and egg yolk in a mixing bowl. Mix until combined.
- Press the mixture into a 9-inch tart pan evenly across the bottom and up the sides.
- Bake for about 20 minutes or until lightly golden. Allow to cool completely.
- Melt dark chocolate in a heatproof bowl over simmering water. Stir until smooth and remove from heat.
- Beat eggs with sugar until creamy in a separate bowl.
- Slowly add melted chocolate to egg mixture, stirring continuously. Mix in vanilla and peppermint extracts.
- Whip heavy cream in another bowl until soft peaks form.
- Fold whipped cream into chocolate mixture until just combined.
- Pour mousse into cooled tart shell and spread evenly. Refrigerate for a few hours or overnight to set.
- Garnish with whipped cream and crushed peppermint candies before serving.
Notes
Allowing the tart to chill overnight intensifies the flavors. Be cautious with peppermint extract; start with less and adjust to taste.
