  • 1/3 cup granulated sugar
  • 1 egg yolk
  • 8 ounces dark chocolate (70% cocoa or higher)
  • 2 large eggs
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon peppermint extract
  • 1 cup heavy cream
  • Whipped cream and crushed peppermint candies for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine flour, butter, sugar, and egg yolk in a mixing bowl. Mix until combined.
  3. Press the mixture into a 9-inch tart pan evenly across the bottom and up the sides.
  4. Bake for about 20 minutes or until lightly golden. Allow to cool completely.
  5. Melt dark chocolate in a heatproof bowl over simmering water. Stir until smooth and remove from heat.
  6. Beat eggs with sugar until creamy in a separate bowl.
  7. Slowly add melted chocolate to egg mixture, stirring continuously. Mix in vanilla and peppermint extracts.
  8. Whip heavy cream in another bowl until soft peaks form.
  9. Fold whipped cream into chocolate mixture until just combined.
  10. Pour mousse into cooled tart shell and spread evenly. Refrigerate for a few hours or overnight to set.
  11. Garnish with whipped cream and crushed peppermint candies before serving.

Notes

Allowing the tart to chill overnight intensifies the flavors. Be cautious with peppermint extract; start with less and adjust to taste.
