Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 can coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 cups chicken or vegetable broth
  • 1 cup bell peppers, chopped
  • 1 cup carrots, chopped
  • 1 cup peas
  • ½ cup fresh cilantro or green onions, chopped
  • 1 cup basmati or jasmine rice
  • 2 tablespoons curry powder
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. In a large skillet, heat a tablespoon of oil over medium heat. Add diced onions and ginger, and sauté for 3-4 minutes until fragrant and translucent.
  2. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  3. Sprinkle in the curry powder, salt, and pepper, then stir well to coat the chicken and cook for an additional minute.
  4. Slowly add the coconut milk and broth to the skillet. Bring to a gentle simmer and let reduce slightly for about 10 minutes.
  5. Toss in the vegetables and uncooked rice, stirring well to combine.
  6. Lower the heat, cover the skillet, and let it cook for 15-20 minutes, or until the rice has absorbed the liquid and is fluffy.
  7. Remove from heat and let sit for a few minutes, then fluff the rice with a fork and stir in freshly chopped cilantro or green onions.
  8. Ladle onto plates and enjoy, possibly with a squeeze of lime juice on top.

Notes

Use fresh herbs for improved flavor. Adjust spice levels based on preference. Pairs well with naan or a simple salad.
