- 1 lb boneless chicken (breast or thighs)
- 1 can coconut milk
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch fresh ginger, minced
- 2 cups chicken or vegetable broth
- 1 cup bell peppers, chopped
- 1 cup carrots, chopped
- 1 cup peas
- ½ cup fresh cilantro or green onions, chopped
- 1 cup basmati or jasmine rice
- 2 tablespoons curry powder
- Salt and pepper to taste
- Juice of 1 lime
Instructions
- In a large skillet, heat a tablespoon of oil over medium heat. Add diced onions and ginger, and sauté for 3-4 minutes until fragrant and translucent.
- Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
- Sprinkle in the curry powder, salt, and pepper, then stir well to coat the chicken and cook for an additional minute.
- Slowly add the coconut milk and broth to the skillet. Bring to a gentle simmer and let reduce slightly for about 10 minutes.
- Toss in the vegetables and uncooked rice, stirring well to combine.
- Lower the heat, cover the skillet, and let it cook for 15-20 minutes, or until the rice has absorbed the liquid and is fluffy.
- Remove from heat and let sit for a few minutes, then fluff the rice with a fork and stir in freshly chopped cilantro or green onions.
- Ladle onto plates and enjoy, possibly with a squeeze of lime juice on top.
Notes
Use fresh herbs for improved flavor. Adjust spice levels based on preference. Pairs well with naan or a simple salad.
