Ingredients

  • 4 boneless turkey fillets
  • 1 cup breadcrumbs (traditional or panko)
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh sage, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cranberry sauce (homemade or store-bought)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey fillets dry with a paper towel, then season both sides with salt and pepper.
  3. In a bowl, combine breadcrumbs, chopped herbs, and minced garlic. Add olive oil gradually until it resembles wet sand.
  4. Coat each turkey fillet with the breadcrumb mixture, pressing lightly.
  5. Heat a skillet over medium heat with olive oil. Sear the fillets for 3-4 minutes on each side until golden.
  6. Transfer the browned fillets to a baking dish and bake for 15-20 minutes until the turkey is cooked through (165°F/74°C).
  7. Warm the cranberry sauce in a saucepan over low heat.
  8. Serve the turkey fillets drizzled with warm cranberry sauce.

Notes

For a vegetarian option, substitute turkey with portobello mushrooms.
