Instructions
- Peel and grate the carrots.
- Core and slice the apples thinly; toss with lemon juice to prevent browning.
- In a bowl, whisk together orange juice, lemon juice, Greek yogurt, honey, and salt until smooth.
- Toss together grated carrots and sliced apples in a large bowl.
- Pour dressing over the salad and mix gently.
- Fold in fresh herbs and sprinkle with nuts or seeds.
- Chill for 30 minutes before serving to let flavors meld.
