Description

A vibrant and refreshing salad filled with crisp veggies, fresh herbs, and a light vinaigrette, perfect for summer gatherings.


Ingredients

  • 1 head romaine or kale, chopped
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1/4 cup fresh parsley or basil, chopped
  • 1/4 cup slivered almonds or sunflower seeds
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon mustard
  • Salt to taste

Instructions

  1. Wash and dry the greens thoroughly, chop into bite-sized pieces.
  2. Dice cucumbers, halve cherry tomatoes and bell peppers uniformly.
  3. Roughly chop the fresh herbs and mix with the vegetables.
  4. Add choice of nuts or seeds, lightly toasted if desired.
  5. Whisk together olive oil, vinegar, mustard, and seasoning for the dressing.
  6. Pour the dressing over the salad and toss gently to combine just before serving.

Notes

Add dressing just before serving to maintain crispness. Customize with additional toppings like feta or avocado as desired.
