Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Toppings: tortilla strips, fresh cilantro, lime wedges, shredded cheese, diced avocado

Instructions

  1. Prepare your ingredients by chopping the onions, bell peppers, and garlic.
  2. Add the chicken to the bottom of the crockpot, followed by the diced tomatoes, onion, bell peppers, garlic, spices, and pour the chicken broth over everything.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken and return it to the soup.
  5. Adjust the seasoning if needed, and serve topped with tortilla strips, cilantro, avocado, and cheese.

Notes

Sauté the aromatics before adding to the crockpot for enhanced flavor. Adjust seasoning during cooking to taste.
