Instructions
- Prepare the vegetables: Peel and dice the potatoes, cut the broccoli into florets, chop the onion, and mince the garlic.
- Combine ingredients in the crockpot: Layer the potatoes, broccoli, onion, and garlic in the crockpot. Pour the broth over the vegetables.
- Add seasonings: Sprinkle in salt, pepper, and thyme, stirring gently.
- Set the slow cooker: Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Blend the soup (optional): Use an immersion blender for a smoother consistency if desired.
- Stir in cheese and cream: Add cheddar cheese and milk or cream, stirring until the cheese is melted.
- Taste and adjust: Adjust seasonings as necessary.
- Serve: Ladle into bowls and garnish with fresh herbs or additional cheese.
Notes
For a vegan option, substitute cheese with nutritional yeast and use dairy-free milk. Sweet potatoes can replace regular potatoes for added sweetness.
