- 1 lb ground beef
- 4 medium potatoes (Russet or Yukon Gold), peeled and diced
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 4 cups beef broth (or vegetable broth)
- 1 cup cream or milk (or coconut milk for dairy-free)
- 2 tbsp fresh parsley, chopped
- Salt, to taste
- Pepper, to taste
- 1 tsp paprika
Instructions
- Brown the beef in a skillet over medium heat, then drain excess fat.
- Sauté onions, garlic, carrots, and celery in the same skillet until soft.
- Transfer the beef and sautéed vegetables to the crockpot. Add the diced potatoes and beef broth.
- Season with salt, pepper, and paprika. Stir to combine.
- Cook in the crockpot on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the cream or milk. Optionally blend part of the soup for a creamier texture.
- Garnish with fresh parsley and serve warm.
