Ingredients

  • 1 lb ground beef
  • 4 medium potatoes (Russet or Yukon Gold), peeled and diced
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups beef broth (or vegetable broth)
  • 1 cup cream or milk (or coconut milk for dairy-free)
  • 2 tbsp fresh parsley, chopped
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp paprika

Instructions

  1. Brown the beef in a skillet over medium heat, then drain excess fat.
  2. Sauté onions, garlic, carrots, and celery in the same skillet until soft.
  3. Transfer the beef and sautéed vegetables to the crockpot. Add the diced potatoes and beef broth.
  4. Season with salt, pepper, and paprika. Stir to combine.
  5. Cook in the crockpot on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in the cream or milk. Optionally blend part of the soup for a creamier texture.
  7. Garnish with fresh parsley and serve warm.
