Ingredients

  • 1 lb ground meat (Italian sausage, beef, or turkey)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 tbsp tomato paste
  • 4 cups vegetable or chicken broth
  • 8 lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 2 tsp Italian herbs (oregano, basil, thyme)

Instructions

  1. Sauté the Aromatics: In a skillet over medium heat, add olive oil. Sauté chopped onions and minced garlic until translucent.
  2. Brown the Meat: Add ground meat to the skillet, cook until browned, and drain excess fat.
  3. Prepare the Crock Pot: Transfer meat and onions to the Crock Pot and add crushed tomatoes, broth, tomato paste, and dried herbs. Stir well.
  4. Add the Noodles: Break lasagna noodles and add them to the mixture.
  5. Cook Slowly: Set the Crock Pot on low for 6-8 hours or high for 3-4 hours.
  6. Incorporate the Cheeses: About 30 minutes before serving, stir in ricotta and mozzarella cheese.
  7. Taste and Adjust: Before serving, taste and adjust seasoning if necessary.

Notes

For a lighter meal, use ground turkey or vegetarian substitutes. Add more vegetables for added nutrition.
