Description

A comforting and hearty soup made with ground beef, tender potatoes, and aromatic seasonings, perfect for chilly evenings.


Ingredients

  • 1 lb ground beef
  • 4 large potatoes, diced (Russet or Yukon Gold)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups beef broth
  • 1 cup heavy cream (or half-and-half)
  • Salt and pepper to taste
  • 1 tsp dried dill
  • 1 tsp dried thyme
  • Optional: fresh parsley for garnish

Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
  2. Transfer the browned beef into your crock pot.
  3. Add chopped potatoes, diced onions, carrots, celery, minced garlic, and seasonings.
  4. Pour the beef broth over the mixture.
  5. Set the crock pot to low and let it cook for 6-8 hours or on high for about 4 hours.
  6. About 30 minutes before serving, stir in the heavy cream or half-and-half.
  7. Adjust seasoning and sprinkle fresh parsley on top before serving.

Notes

For a lighter version, substitute ground turkey for beef, and use vegetable broth instead of beef broth.
