Ingredients

- 1 lb ground beef
- 4 large potatoes, diced (Russet or Yukon Gold)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cups beef broth
- 1 cup heavy cream (or half-and-half)
- Salt and pepper to taste
- 1 tsp dried dill
- 1 tsp dried thyme
- Optional: fresh parsley for garnish
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
- Transfer the browned beef into your crock pot.
- Add chopped potatoes, diced onions, carrots, celery, minced garlic, and seasonings.
- Pour the beef broth over the mixture.
- Set the crock pot to low and let it cook for 6-8 hours or on high for about 4 hours.
- About 30 minutes before serving, stir in the heavy cream or half-and-half.
- Adjust seasoning and sprinkle fresh parsley on top before serving.
Notes
For a lighter version, substitute ground turkey for beef, and use vegetable broth instead of beef broth.
