- Salt and pepper to taste
- Vegetable oil for frying
- Fresh cilantro
- Fresh Thai basil
- 4 bread rolls
- Cabbage, cucumber, or pickled vegetables for topping
- Lime for squeezing
Instructions
- Marinate the chicken: In a bowl, combine coconut milk, minced garlic, ginger, fish sauce, and a pinch of salt. Add chicken and let it marinate for at least 30 minutes.
- Prepare the coating: In another bowl, mix all-purpose flour and cornstarch with salt and pepper.
- Heat the oil: In a deep skillet, heat vegetable oil over medium-high heat until shimmering.
- Coat and fry the chicken: Remove chicken from marinade, dredge in flour mixture, and fry until golden brown and crispy, about 5-7 minutes.
- Drain and rest: Transfer fried chicken to drain excess oil on a wire rack.
- Assemble the sandwich: Spread sauce on bread rolls, layer with crispy chicken, fresh veggies, and herbs. Squeeze lime over the top.
