Instructions

  1. Prepare the ube: Peel and boil until tender, then mash until smooth.
  2. Combine dry ingredients: In a bowl, mix flour, baking powder, and sugar.
  3. Mix wet ingredients: Whisk together coconut milk, melted butter, and eggs in another bowl.
  4. Combine wet and dry: Pour wet ingredients into dry, fold in mashed ube gently.
  5. Preheat waffle iron: Lightly grease it.
  6. Cook the waffles: Pour batter into waffle iron, and cook until golden brown (around 5 minutes).
  7. Serve warm: Top with syrup or fresh fruit.
