- 1 cup coconut milk
- 2 eggs

Instructions
- Prepare the ube: Peel and boil until tender, then mash until smooth.
- Combine dry ingredients: In a bowl, mix flour, baking powder, and sugar.
- Mix wet ingredients: Whisk together coconut milk, melted butter, and eggs in another bowl.
- Combine wet and dry: Pour wet ingredients into dry, fold in mashed ube gently.
- Preheat waffle iron: Lightly grease it.
- Cook the waffles: Pour batter into waffle iron, and cook until golden brown (around 5 minutes).
- Serve warm: Top with syrup or fresh fruit.
Notes
For extra crispiness, let waffles rest on a wire rack. They can be stored in an airtight container for up to three days or frozen for longer preservation.
