Instructions
- Combine ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well blended.
- Mix wet ingredients: In a separate bowl, combine mashed ube, milk, melted butter, and eggs. Mix until smooth and creamy.
- Bring it all together: Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. Avoid over-mixing; some lumps are perfectly fine.
- Preheat your waffle iron: Follow the manufacturer’s instructions for your waffle iron and ensure it’s hot and ready.
- Cook the waffles: Lightly grease the waffle iron with a bit of oil or cooking spray, then ladle the batter into the center, spreading it out slightly. Close the iron and cook until golden brown and crispy, about 4-6 minutes.
