- 2 cups boneless chicken (breast or thighs)
- 4 flour tortillas
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 medium onion, diced
- 1 cup shredded Monterey Jack or cheddar cheese
- 1 cup diced vegetables (peppers or corn)
- Oil for frying
- Sour cream or guacamole for serving
Instructions
- In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes. Add the chicken and spices; cook until the chicken is no longer pink, about 6-8 minutes.
- Remove the chicken mixture from heat and stir in the shredded cheese until melted.
- Warm the tortillas slightly in the microwave. Scoop about 1/4 to 1/3 cup of the chicken filling into each tortilla and roll tightly, tucking in the ends.
- In a deep skillet, heat oil over medium-high heat. Gently place the chimichangas seam-side down and fry until golden brown, about 3-4 minutes on each side.
- Drain excess oil on a paper towel-lined plate and serve warm, garnished with fresh cilantro, tomatoes, avocado, and sour cream or guacamole.
Notes
Adjust the spice level according to your preference. These chimichangas can be frozen for later use.
