- 3 medium Sweet Potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons Olive Oil
- 1 teaspoon Sea Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Paprika (smoked or sweet, optional)
- Fresh Herbs (Thyme or Rosemary, optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then slice them into even cubes.
- In a large mixing bowl, drizzle the sweet potato cubes with olive oil until lightly coated.
- Sprinkle with sea salt, black pepper, and paprika; toss gently to coat.
- Spread the cubes in a single layer on a parchment-lined baking sheet.
- Roast for about 25-30 minutes, tossing halfway through, until golden brown and crispy.
- Optional: Add fresh herbs during the last few minutes of roasting.
