Description

A delightful and comforting baked cod dish with crispy panko and Parmesan crust.


Ingredients

  • 4 cod fillets
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • Salt and pepper to taste
  • 2 tablespoons olive oil or melted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with a towel.
  3. Combine panko, Parmesan, garlic, herbs, salt, and pepper in a bowl.
  4. Beat the eggs in another bowl, adding a pinch of salt.
  5. Dip each cod fillet in the egg wash, then press into the panko mixture.
  6. Place the coated fillets on a greased baking sheet.
  7. Drizzle olive oil or melted butter over the top.
  8. Bake for 15-20 minutes until crispy and flaky.
  9. Serve with a squeeze of fresh lemon juice.
