Ingredients

- 4 cod fillets
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 2 cloves garlic, minced
- 2 large eggs
- Salt and pepper to taste
- 2 tablespoons olive oil or melted butter
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with a towel.
- Combine panko, Parmesan, garlic, herbs, salt, and pepper in a bowl.
- Beat the eggs in another bowl, adding a pinch of salt.
- Dip each cod fillet in the egg wash, then press into the panko mixture.
- Place the coated fillets on a greased baking sheet.
- Drizzle olive oil or melted butter over the top.
- Bake for 15-20 minutes until crispy and flaky.
- Serve with a squeeze of fresh lemon juice.

For a gluten-free option, substitute panko with crushed gluten-free crackers.
