- 4 Fresh Cod Fillets
- 1 cup Panko Breadcrumbs
- 1/2 cup Grated Parmesan Cheese
- 3 cloves Fresh Garlic, minced
- 1 Egg, beaten
- 2 tbsp Olive Oil
- 1 Lemon, zest and juice
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- In one bowl, whisk the egg. In another bowl, mix panko, Parmesan, garlic, lemon zest, salt, and pepper.
- Pat cod fillets dry; dip each in egg wash and coat with breadcrumb mixture.
- Place coated fillets on the baking sheet and drizzle with olive oil.
- Bake for 12-15 minutes, until golden and fish flakes easily.
- Drizzle with fresh lemon juice before serving.
