  • 1 cup Panko Breadcrumbs

  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. In one bowl, whisk the egg. In another bowl, mix panko, Parmesan, garlic, lemon zest, salt, and pepper.
  4. Pat cod fillets dry; dip each in egg wash and coat with breadcrumb mixture.
  5. Place coated fillets on the baking sheet and drizzle with olive oil.
  6. Bake for 12-15 minutes, until golden and fish flakes easily.
  7. Drizzle with fresh lemon juice before serving.
