Instructions
- Slice the onions into thin rings and soak in ice water for 30 minutes.
- Preheat the oven to 425°F (220°C) and set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs, Parmesan, garlic, salt, and pepper.
- Remove and dry the onions, coat each ring in flour, dip in egg, and roll in the breadcrumb mixture.
- Place onion rings on a parchment-lined baking sheet, drizzle with olive oil, and bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
