Deliciously crunchy chicken cutlets coated in Parmesan and breadcrumbs, perfect for family dinners.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 2 large eggs
- ½ cup all-purpose flour
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Flatten the chicken breasts to ½ inch thickness using a meat mallet.
- Season with salt and pepper, and let sit for 15 minutes.
- Set up three shallow bowls: one with flour, one with whisked eggs, and one with panko, Parmesan, garlic, and herbs.
- Coat each chicken piece in flour, then dip in the egg wash, and finally coat with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat.
- Fry the cutlets for 4–5 minutes per side until golden and cooked through.
- Place cooked cutlets on paper towels to drain excess oil and garnish with parsley and lemon juice if desired.
Notes
For a gluten-free option, substitute breadcrumbs with almond flour.
