Description

Deliciously crunchy chicken cutlets coated in Parmesan and breadcrumbs, perfect for family dinners.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 large eggs
  • ½ cup all-purpose flour
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Flatten the chicken breasts to ½ inch thickness using a meat mallet.
  2. Season with salt and pepper, and let sit for 15 minutes.
  3. Set up three shallow bowls: one with flour, one with whisked eggs, and one with panko, Parmesan, garlic, and herbs.
  4. Coat each chicken piece in flour, then dip in the egg wash, and finally coat with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Fry the cutlets for 4–5 minutes per side until golden and cooked through.
  7. Place cooked cutlets on paper towels to drain excess oil and garnish with parsley and lemon juice if desired.

Notes

For a gluten-free option, substitute breadcrumbs with almond flour.
