- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped

Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken thighs dry using paper towels.
- In a small bowl, mix olive oil, garlic powder, paprika, salt, pepper, and chopped herbs.
- Rub the mixture all over the chicken, getting under the skin for maximum flavor.
- Place the chicken thighs on a baking sheet lined with parchment paper or foil, ensuring they are spaced out.
- Bake for 35-40 minutes until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown.
- Allow the chicken to rest for 5-10 minutes before serving.
Notes
For added crunch, you can broil the chicken for a couple of minutes at the end. Pair with seasonal vegetables or a fresh salad.
