  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry using paper towels.
  3. In a small bowl, mix olive oil, garlic powder, paprika, salt, pepper, and chopped herbs.
  4. Rub the mixture all over the chicken, getting under the skin for maximum flavor.
  5. Place the chicken thighs on a baking sheet lined with parchment paper or foil, ensuring they are spaced out.
  6. Bake for 35-40 minutes until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown.
  7. Allow the chicken to rest for 5-10 minutes before serving.

Notes

For added crunch, you can broil the chicken for a couple of minutes at the end. Pair with seasonal vegetables or a fresh salad.
