Ingredients

  • 1 cup almond flour
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • Oil for frying (avocado or coconut)

Instructions

  1. Slice onions into thin rings, about 1/4 inch thick.
  2. Set up a breading station with almond flour mixed with garlic powder, paprika, and salt in one bowl, and beaten eggs in another bowl.
  3. Dip each onion ring in the egg, allowing excess to drip off, then coat in the almond flour mixture.
  4. Heat oil in a deep skillet over medium heat until shimmering.
  5. Fry onion rings in batches for 2-4 minutes per side until golden brown. Use a slotted spoon to transfer to a paper towel-lined plate.
  6. Sprinkle with salt while hot and serve warm. Optional: add lemon or hot sauce for an extra kick!
