- 1/2 teaspoon black pepper
- 1 teaspoon baking powder
- 1 cup buttermilk
- High-smoke-point oil (canola or peanut) for frying
Instructions
- Prepare the Wings: Rinse chicken wings under cool water and pat dry with paper towels.
- Soak in Buttermilk: In a large bowl, soak the wings in buttermilk for at least 2 hours or overnight.
- Mix the Coating: Combine flour, cornstarch, baking powder, and seasonings in another bowl.
- Coat the Wings: Remove the wings from the buttermilk, dredge them in the flour mixture, and shake off excess.
- Heat the Oil: In a large pot, heat oil to 350°F (175°C).
- Fry the Wings: Fry wings in batches for 8-12 minutes until golden brown.
- Drain and Serve: Remove wings and let drain on paper towels. Serve hot with dipping sauces.
Notes
For extra crunch, ensure chicken wings are patted dry before coating. Fry in batches to avoid overcrowding the pot.
