- 1 cup panko breadcrumbs
- 1/2 cup Caesar dressing
- 2 cups fresh romaine lettuce
- 1/4 cup grated Parmesan cheese
- 2 slices ciabatta or sourdough bread
- Salt, to taste
- Pepper, to taste
- 1 teaspoon garlic powder
- 1/2 cup flour
- 2 beaten eggs
Instructions
- Season the chicken with salt, pepper, and garlic powder.
- Dredge the chicken in flour, dip into beaten eggs, and coat with breadcrumbs.
- Heat oil in a skillet and fry the chicken until golden, about 5-7 minutes per side.
- Prepare Caesar dressing by whisking mayonnaise, minced garlic, Worcestershire sauce, lemon juice, anchovy paste, and Parmesan.
- Toast the bread, spread dressing on one side, add romaine, fried chicken, and sprinkle with Parmesan.
- Top with the other slice of bread, slice, and serve with sweet potato fries or a salad.
