- 2 boneless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup homemade or store-bought Caesar dressing
- 2 cups romaine lettuce, chopped
- 1/4 cup shaved or grated Parmesan cheese
- 2 bread rolls (ciabatta or kaiser)
- Salt and pepper to taste
- Lemon juice and garlic for marinating
- Oil for frying
- Butter for toasting
Instructions
- Prepare the chicken: Season chicken breasts with salt and pepper, and marinate in lemon juice and garlic for 30 minutes.
- Bread the chicken: Set up a dredging station with flour, beaten eggs, and panko breadcrumbs. Coat chicken in flour, dip in egg, and coat in panko.
- Fry up the flavor: Heat oil in a skillet over medium heat and fry chicken for 4-5 minutes on each side until golden brown. Alternatively, brush with olive oil and bake at 400°F for 25-30 minutes.
- Toast the bread: Lightly butter the rolls and toast in a skillet until golden.
- Assemble the sandwich: Spread Caesar dressing on the bottom piece of the bread, add crispy chicken, romaine, and Parmesan, then top with the other bread piece.
- Enjoy! Serve immediately for best flavor and texture.
Notes
For extra crispy chicken, double-dip in the breadcrumbs. Monitor oil temperature to avoid burning or greasiness.
