  • 2 cups romaine lettuce, chopped
  • 1/4 cup shaved or grated Parmesan cheese
  • 2 bread rolls (ciabatta or kaiser)
  • Salt and pepper to taste
  • Lemon juice and garlic for marinating
  • Oil for frying
  • Butter for toasting

Instructions

  1. Prepare the chicken: Season chicken breasts with salt and pepper, and marinate in lemon juice and garlic for 30 minutes.
  2. Bread the chicken: Set up a dredging station with flour, beaten eggs, and panko breadcrumbs. Coat chicken in flour, dip in egg, and coat in panko.
  3. Fry up the flavor: Heat oil in a skillet over medium heat and fry chicken for 4-5 minutes on each side until golden brown. Alternatively, brush with olive oil and bake at 400°F for 25-30 minutes.
  4. Toast the bread: Lightly butter the rolls and toast in a skillet until golden.
  5. Assemble the sandwich: Spread Caesar dressing on the bottom piece of the bread, add crispy chicken, romaine, and Parmesan, then top with the other bread piece.
