  • 1 cup sharp cheddar cheese, shredded
  • 46 fresh jalapenos
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • Oil for frying

Instructions

  1. Prep the jalapenos by washing and slicing them in half lengthwise, removing seeds if desired.
  2. In a mixing bowl, combine softened cream cheese and shredded cheddar cheese along with salt, pepper, and garlic powder.
  3. Stuff each jalapeno half with the cheese mixture.
  4. Prepare coatings: place flour in one bowl, beaten eggs in another, and mix flour and cornmeal with seasonings in a third bowl.
  5. Coat each jalapeno: dip in flour, then egg, and finally dredge in the cornmeal mixture.
  6. Fry in hot oil at 350°F until golden brown, or air fry at 375°F for 10-12 minutes, flipping halfway.
  7. Drain on paper towels and serve hot with dipping sauce.
