- 8 oz cream cheese, softened
- 1 cup sharp cheddar cheese, shredded
- 4–6 fresh jalapenos
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 2 large eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- Oil for frying
Instructions
- Prep the jalapenos by washing and slicing them in half lengthwise, removing seeds if desired.
- In a mixing bowl, combine softened cream cheese and shredded cheddar cheese along with salt, pepper, and garlic powder.
- Stuff each jalapeno half with the cheese mixture.
- Prepare coatings: place flour in one bowl, beaten eggs in another, and mix flour and cornmeal with seasonings in a third bowl.
- Coat each jalapeno: dip in flour, then egg, and finally dredge in the cornmeal mixture.
- Fry in hot oil at 350°F until golden brown, or air fry at 375°F for 10-12 minutes, flipping halfway.
- Drain on paper towels and serve hot with dipping sauce.
Notes
For a healthier version, try air frying. Keep an eye on the oil temperature to maintain crispiness.
