- 2 cups potatoes, diced (gold or red preferred)

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop the broccoli into bite-sized florets and dice the potatoes into small cubes.
- In a large bowl, combine broccoli and potatoes with olive oil, garlic, salt, pepper, and herbs; toss to coat.
- Line a baking sheet with parchment paper and spread the veggie mix in an even layer.
- Roast in the oven for 25-30 minutes, tossing halfway through until golden and crispy.
- Remove from the oven and cool slightly before serving. Enjoy with a dipping sauce if desired.
