Description

Delightful crispy bites combining fresh broccoli and tender potatoes, seasoned to perfection for a cozy meal or snack.

Ingredients

Scale
  • 2 cups broccoli florets
  • 2 cups potatoes, diced (gold or red preferred)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh herbs (parsley or dill)
  • Optional: smoked paprika or cumin
  • Optional: cheese for a twist

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the broccoli into bite-sized florets and dice the potatoes into small cubes.
  3. In a large bowl, combine broccoli and potatoes with olive oil, garlic, salt, pepper, and herbs; toss to coat.
  4. Line a baking sheet with parchment paper and spread the veggie mix in an even layer.
  5. Roast in the oven for 25-30 minutes, tossing halfway through until golden and crispy.
  6. Remove from the oven and cool slightly before serving. Enjoy with a dipping sauce if desired.

Notes

Avoid overcrowding the baking sheet for optimal crispiness. Feel free to substitute with sweet potatoes or add cheese if desired.
