  • 12 tbsp olive oil
  • Optional vegetables: bell peppers, corn, diced jalapeños

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic for 1 minute.
  3. Add black beans and spices, mashing them gently with a fork.
