- 1 can black beans, drained
- 1 cup sharp cheddar cheese, shredded
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1–2 tbsp olive oil
- Optional vegetables: bell peppers, corn, diced jalapeños
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat and sauté minced garlic for 1 minute.
- Add black beans and spices, mashing them gently with a fork.
- Stir in cheddar cheese and green onions, cooking for another 2-3 minutes until heated through.
- Assemble the eggrolls by placing a spoonful of the filling on the eggroll wrapper and rolling tightly, sealing edges with water.
- Brush the assembled eggrolls with olive oil and place on the baking sheet.
- Bake for 15-20 minutes, flipping halfway through, until golden brown and crisp.
- Let cool slightly and serve with your favorite dipping sauce.
