- Zest and juice of 1 lemon
- 1 teaspoon vanilla extract
- ½ cup heavy cream (or half-and-half for a lighter option)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add the lemon zest, lemon juice, and vanilla extract, mixing thoroughly.
- Gradually add the all-purpose flour while mixing until just combined.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Scoop tablespoon-sized dough balls onto a lined baking sheet, allowing space between each.
- Bake for 12-15 minutes until edges are lightly golden.
- Sprinkle granulated sugar on top of each cookie and caramelize with a kitchen torch until golden.
- Allow cookies to cool slightly before serving.
Notes
