Ingredients

  • Salt and pepper, to taste

Instructions

  1. Prep your vegetables by washing and chopping them into small, uniform pieces.
  2. In a large pot, heat olive oil and sauté onions until translucent. Add garlic and sauté for an additional minute.
  3. Add chopped vegetables to the pot and stir frequently for about 5-7 minutes.
  4. Pour in the vegetable broth, bring to a boil, then reduce to a simmer for about 20 minutes.
  5. Blend the soup until creamy with an immersion blender or a countertop blender.
  6. Mix in cream, season with salt, pepper, and fresh herbs, and simmer for an additional 5 minutes.
