- Salt and pepper, to taste
- Splash of lemon juice, optional
Instructions
- Prep your vegetables by washing and chopping them into small, uniform pieces.
- In a large pot, heat olive oil and sauté onions until translucent. Add garlic and sauté for an additional minute.
- Add chopped vegetables to the pot and stir frequently for about 5-7 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce to a simmer for about 20 minutes.
- Blend the soup until creamy with an immersion blender or a countertop blender.
- Mix in cream, season with salt, pepper, and fresh herbs, and simmer for an additional 5 minutes.
- Ladle into bowls, garnishing with herbs or a dash of olive oil, and serve warm.
