- 1 cup Heavy Cream
- 3 cloves Garlic, minced

- 1/4 cup Fresh Basil, chopped
- Zest of 1 Lemon
Instructions
- Rinse canned butter beans and set aside.
- If using fresh beans, cook them until tender according to package instructions.
- In a skillet over medium heat, add a splash of olive oil and sauté minced garlic until fragrant (about 1 minute).
- Toss in fresh spinach and cook until wilted (2-3 minutes).
- Add sun-dried tomatoes and vegetable broth, stirring to combine.
- Gently fold in the butter beans until evenly coated.
- Pour in the heavy cream and simmer for about 5 minutes to thicken the sauce.
- Finish with fresh basil and lemon zest before serving.
