Ingredients

  • 2 lobster tails, chopped
  • 8 oz fettuccine or linguine
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh basil and parsley, for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. While the pasta cooks, chop the lobster tails into bite-sized pieces.
  3. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  4. Add sun-dried tomatoes and cook for 1 minute, then stir in spinach until wilted.
  5. Pour in heavy cream and let simmer; add grated Parmesan cheese until melted and creamy, adjusting with reserved pasta water if too thick.
  6. Gently fold in the lobster and then the cooked pasta, tossing until well combined.
  7. Season with salt and pepper; sprinkle with chopped herbs before serving.

Notes

For a gluten-free version, use gluten-free pasta. For a dairy-free version, substitute heavy cream with cashew cream.
