- 2 lobster tails, chopped
- 8 oz fettuccine or linguine
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh basil and parsley, for garnish
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
- While the pasta cooks, chop the lobster tails into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add sun-dried tomatoes and cook for 1 minute, then stir in spinach until wilted.
- Pour in heavy cream and let simmer; add grated Parmesan cheese until melted and creamy, adjusting with reserved pasta water if too thick.
- Gently fold in the lobster and then the cooked pasta, tossing until well combined.
- Season with salt and pepper; sprinkle with chopped herbs before serving.
Notes
For a gluten-free version, use gluten-free pasta. For a dairy-free version, substitute heavy cream with cashew cream.
