  • 1/4 cup fresh tarragon, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup white wine (optional)
  • Salt and pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. Season the chicken generously with salt and pepper. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions and minced garlic to the pan, cooking until fragrant and translucent (about 3-4 minutes).
  3. Increase heat to medium-high and place the chicken in the skillet. Sear until golden on both sides (about 6-7 minutes per side).
  4. Add a splash of white wine to deglaze the pan, scraping up any browned bits.
  5. Pour in chicken broth and bring to a gentle simmer. Reduce heat and slowly whisk in the heavy cream until combined.
  6. Toss in fresh tarragon and allow to simmer for another 5 minutes.
  7. Adjust seasoning if needed and serve the chicken with the creamy sauce spooned generously over it.
