- 4 boneless chicken breasts or thighs
- 1 cup heavy cream
- 1/4 cup fresh tarragon, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup white wine (optional)
- Salt and pepper to taste
- 1 teaspoon olive oil
Instructions
- Season the chicken generously with salt and pepper. Heat olive oil in a large skillet over medium heat.
- Add chopped onions and minced garlic to the pan, cooking until fragrant and translucent (about 3-4 minutes).
- Increase heat to medium-high and place the chicken in the skillet. Sear until golden on both sides (about 6-7 minutes per side).
- Add a splash of white wine to deglaze the pan, scraping up any browned bits.
- Pour in chicken broth and bring to a gentle simmer. Reduce heat and slowly whisk in the heavy cream until combined.
- Toss in fresh tarragon and allow to simmer for another 5 minutes.
- Adjust seasoning if needed and serve the chicken with the creamy sauce spooned generously over it.
Notes
