Ingredients

  • 1 lb Ground Beef (or turkey)
  • 8 oz Cream Cheese or Sour Cream
  • 4 cups Chicken or Vegetable Broth
  • 2 tbsp Taco Seasoning
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 can (15 oz) Black or Kidney Beans
  • 1/4 cup Fresh Cilantro
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • Salt and Pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat for 5-7 minutes.
  2. Drain excess fat, add onions and garlic, and sauté for 3-4 minutes.
  3. Stir in taco seasoning, diced tomatoes, and broth. Simmer for about 10 minutes.
  4. Mix in cream cheese, stirring until melted and incorporated.
  5. Add beans, simmer for another 5-10 minutes.
  6. Sprinkle in cilantro, season with salt and pepper, and serve hot.
  7. Garnish with extra cilantro, sour cream, and tortilla chips if desired.
