- 1 lb Ground Beef (or turkey)
- 8 oz Cream Cheese or Sour Cream
- 4 cups Chicken or Vegetable Broth
- 2 tbsp Taco Seasoning
- 1 can (14.5 oz) Diced Tomatoes
- 1 can (15 oz) Black or Kidney Beans
- 1/4 cup Fresh Cilantro
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- Salt and Pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat for 5-7 minutes.
- Drain excess fat, add onions and garlic, and sauté for 3-4 minutes.
- Stir in taco seasoning, diced tomatoes, and broth. Simmer for about 10 minutes.
- Mix in cream cheese, stirring until melted and incorporated.
- Add beans, simmer for another 5-10 minutes.
- Sprinkle in cilantro, season with salt and pepper, and serve hot.
- Garnish with extra cilantro, sour cream, and tortilla chips if desired.
