A heartwarming soup combining sweet potatoes, kale, and wild rice, perfect for chilly days.
Ingredients

- 2 medium Sweet Potatoes, peeled and diced
- 2 cups Kale, chopped
- 1 cup Wild Rice
- 1 Onion, diced
- 2 cloves Garlic, minced
- 4 cups Vegetable Broth
- 1 cup Coconut Milk or Cream
- Salt and Pepper to taste
- 1 tsp Thyme
- 1/2 tsp Chili Flakes (optional)
Instructions
- Prep the ingredients by peeling and dicing the sweet potatoes, chopping the kale, and dicing the onion and garlic.
- In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent, then add the minced garlic and sauté for another minute.
- Add the diced sweet potatoes and stir well to combine with the aromatics. Let them sauté for about 5 minutes.
- Add the vegetable broth and bring to a gentle boil. Reduce heat and let simmer for 15-20 minutes until sweet potatoes are tender.
- Add the wild rice and cook according to package directions, around 30-40 minutes, until tender.
- Mix in the chopped kale and let it wilt for about 5 minutes.
- Stir in the coconut milk or cream, adding salt, pepper, and any additional spices to taste.
- Serve warm, garnished with fresh herbs if desired.
Notes
For a creamier texture, blend a portion of the soup before serving. Can substitute spinach for kale if needed.
