A heartwarming soup combining sweet potatoes, kale, and wild rice, perfect for chilly days.


Ingredients

  • 2 medium Sweet Potatoes, peeled and diced
  • 2 cups Kale, chopped
  • 1 cup Wild Rice
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk or Cream
  • Salt and Pepper to taste
  • 1 tsp Thyme
  • 1/2 tsp Chili Flakes (optional)

Instructions

  1. Prep the ingredients by peeling and dicing the sweet potatoes, chopping the kale, and dicing the onion and garlic.
  2. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent, then add the minced garlic and sauté for another minute.
  3. Add the diced sweet potatoes and stir well to combine with the aromatics. Let them sauté for about 5 minutes.
  4. Add the vegetable broth and bring to a gentle boil. Reduce heat and let simmer for 15-20 minutes until sweet potatoes are tender.
  5. Add the wild rice and cook according to package directions, around 30-40 minutes, until tender.
  6. Mix in the chopped kale and let it wilt for about 5 minutes.
  7. Stir in the coconut milk or cream, adding salt, pepper, and any additional spices to taste.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

For a creamier texture, blend a portion of the soup before serving. Can substitute spinach for kale if needed.
