Ingredients

  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the orzo until al dente, according to package instructions. Reserve a cup of pasta water, then drain the rest.
  2. In the same pot, melt butter over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Add fresh spinach and sauté until wilted.
  3. Return the cooked orzo to the pot. Add in heavy cream and freshly grated Parmesan, stirring until the cheese melts into a creamy coating. If it’s too thick, add reserved pasta water until desired consistency is reached.
  4. Taste and adjust seasoning, adding salt and freshly cracked pepper.
  5. Serve hot, garnishing with extra Parmesan and a sprinkle of freshly cracked pepper.

Notes

For variations, consider adding roasted garlic, crispy bacon, or different vegetables. A squeeze of lemon juice before serving can add brightness.
