Ingredients

  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 3 cups vegetable or chicken broth
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  2. Add the fresh spinach and cook until wilted, approximately 2-3 minutes.
  3. Pour in the orzo, stirring to coat it in the flavored butter and garlic. Sauté for another minute.
  4. Pour in the broth and bring to a simmer. Cook the orzo according to package instructions, stirring occasionally, for about 10-12 minutes or until al dente.
  5. Once the orzo is cooked, lower the heat, and stir in the heavy cream and Parmesan cheese. Mix well until creamy.
  6. Remove from heat and let it sit for a couple of minutes to thicken slightly. Garnish with additional Parmesan and fresh herbs if desired before serving.
