- 1 cup orzo
- 2 cups fresh spinach
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons butter
- 3 cups vegetable or chicken broth
- ½ cup heavy cream
- Salt and pepper to taste
Instructions
- In a large skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add the fresh spinach and cook until wilted, approximately 2-3 minutes.
- Pour in the orzo, stirring to coat it in the flavored butter and garlic. Sauté for another minute.
- Pour in the broth and bring to a simmer. Cook the orzo according to package instructions, stirring occasionally, for about 10-12 minutes or until al dente.
- Once the orzo is cooked, lower the heat, and stir in the heavy cream and Parmesan cheese. Mix well until creamy.
- Remove from heat and let it sit for a couple of minutes to thicken slightly. Garnish with additional Parmesan and fresh herbs if desired before serving.
Notes
For added flavor, consider incorporating a dash of nutmeg when adding the cream and garnishing with fresh herbs enhances presentation.
