Ingredients

  • 2 cups Fresh Spinach
  • 2 cloves Garlic, minced
  • 1/2 cup Parmesan Cheese, grated
  • 1 cup Heavy Cream
  • 2 tbsp Butter
  • 1 cup Vegetable Broth
  • Salt and Pepper to taste

Instructions

  1. In a pot of salted boiling water, add the orzo and cook until al dente, according to package instructions.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  3. Toss in the fresh spinach, stirring until wilted.
  4. Pour in the heavy cream and vegetable broth, bringing the mixture to a gentle simmer. Stir in the grated Parmesan cheese until melted.
  5. Add the cooked orzo to the skillet, tossing to combine. Adjust the consistency with reserved pasta water if needed.
  6. Season with salt, pepper, and additional herbs. Serve warm, garnished with extra Parmesan.
